Biography
I am interested in characterizing aromatic volatile compounds that influence apple flavor within the University of Minnesota Breeding Program germplasm. In order to observe and characterize these volatiles and their potential differences, I am using an untargeted gas chromatography-mass spectrometry approach and sensory analysis. Another interest of my research is in understanding the metabolism of soft scald, a post-harvest storage disorder.
