I am using RNA-seq to identify genes related to a trait of apple fruit that we call “crispness retention.” This is one of the valuable attributes that the ‘Honeycrisp’ apple possesses. With this trait, the fruit retains its crisp texture during storage for a longer-term consumer appeal. The experiment is based on the comparison between gene expression in varieties that retain and lose crispness.
